Happy Spring Equinox everyone! In celebration of today, the second annual Employee Wellness Event hosted by the Wellness Collaborative and Chancellor DeWald is being held in the CCRS building from 11 AM – 1 PM. The overall event is designed to help faculty and staff rejuvenate their well-being by taking a break in their busy work day to de-stress and get away from their desks. At the event, I get the fun job of helping run our food demonstration/sampling with the Fresh Plate by helping people create their own healthy grain bowls or instant layered soups! While we don’t have any particular recipes to share, we have several healthy ingredient options that leave the flavor combinations endlessly creative. Come down to the event for your lunch break and experience how yummy grain bowls or instant soups can be! If that isn’t enough for you to come, we also have some other enticing attractions such as an animal petting station, Bloomsday sign-up table, Wii bowling competition, massages, mindfulness sessions and even a virtual reality station!

Some of the ingredients you could expect to see at my area of the event are as follows:

Grains:

  • Freekeh, Farro & Bulgur

Spiralized Veggies:

  • Zoodles, Kohlrabi, Parsnips & Carrots

Broth:

  • Miso Ginger and Vegetable

Protein:

  • Chicken, Tofu, Hard Boiled Eggs & Roasted Chickpeas

Veggies:

  • Spinach, Chopped Asparagus, Sprouts, Mushrooms, Jalapenos & Scallions

Spices:

  • Greek Freak Seasoning, Chili Margarita Seasoning, Thai Basil Pesto & Parsley

Sauces:

  • Gochujang Oil, Lemon Vinaigrette, Lemon Tahini & Peanut Sauce
