Before this recipe I had not even heard of green garbanzo beans before. For everyone that is in my same wandering boat, turns out these little guys are even more awesome than their blonde counterpart! Green garbanzo beans are the same as the traditional garbanzo beans we are used to but just picked at an earlier stage in the plant’s life, allowing for more nutrition and flavor to be harvested from this legume. With even more fiber and protein than traditional canned blonde garbanzo beans, they really make this recipe as healthy as it can be. Healthy Recipe of the Week – Cauliflower Rice Stuffed Peppers

Thank you to everyone that was able to make it to our first annual Wellness Camp yesterday! It was very rewarding to serve so much of the WSU Spokane campus during our first annual event, and I hope that those who came felt refreshed and more productive the rest of their day. At the Wellness Camp we did demo the cauliflower fried rice recipe that was featured in last week’s blog article, which everyone was amazed by once they tried it. 

So to keep the wonder of the cauliflower rice going, this week I would like to introduce to you a different way you can enjoy this healthy grain substitution! A good tip to add that we discussed while demoing yesterday, is keep in mind you don’t need a food processor or a labored amount of time to grate your cauliflower. Several stores now sell cauliflower rice already done, examples I heard yesterday were mainly Trader Joes and Costco. So next time you’re out shopping pick up a bag for an even easier dinner with this recipe.

Healthy Recipe of the Week – Berry Crumble

I originally found this recipe from a cookbook that was recommended to me by my Naturopath doctor, and so far it has been my favorite recipe in the whole book. This berry crumble is perfect by itself, with yogurt for a quick parfait, or even for dessert with vanilla ice cream! I have made it 3 weeks in a row now, and absolutely love having it in my food prep for the week. I have been using fresh berries most of the time since the strawberries and blueberries are coming out in stores again (yay!) but have substituted for frozen berries when I don’t have fresh. Try it out today for a fun, easy and healthy Valentines Day dessert you are sure to love!

Healthy Recipe of the Week – Winter Quinoa

A common phrase I hear a lot and have found to be true with myself, is you crave produce that is in season. While winter time does have its downfalls to the variety of produce in the season, where it flourishes is in citrus. I could and am perfectly happy with having some version of orange every single day as my snack, however this method would not live up to the full potential of the fruit. This is a fun recipe that lets me use citrus in a different way, while also giving me a good serving of plant-based protein from the wonderful whole grain that quinoa is.

Healthy Recipe of the Week – Spicy Coco Sauce

This Spicy Coco Sauce recipe is amazing and goes great with grains, cauliflower rice, roasted vegetables, and more! It keeps for about a week so feel free to experiment with it in different meals. The first time I tried it was at my sister-in-law’s house, where she mixed it in with some roasted vegetables she cooked that night.
