Rich in flavor and nutrients, strawberries are my favorite fruit to look forward to in the springtime. Did you know that just 1 cup of strawberries (equivalent to about 8 strawberries) gives you 160% of your Vitamin C recommended daily value? These little guys are awesome, and they go with a lot of foods, even a salad! While simple and delicious, this salad is my favorite to eat and is well loved around my family. I hope you get to try it soon and impress your guests with this easily elegant side dish. Stay tuned next week for the perfect dressing combo to go with it.

Makes: 2 Servings

Ingredients:

  • 5 oz of Spinach
  • 7 oz Strawberries, sliced
  • 1.5 oz Feta, crumbled
  • 2 oz Hazelnuts
  • 6 oz Chicken

Instructions:

  1. In a medium size bowl, add your spinach, feta and hazelnuts. Set aside.
  2. Wash/dry your strawberries before using them and cut off their stems. Once this is done, lay the strawberries on the flat side where the stem was, cut them down the middle, and slice them thinly perpendicular to that middle slice. Add to your bowl.
  3. Against the grain of the chicken, cut your chicken to make bite-size pieces. Add to your bowl, toss all ingredients lightly and serve immediately!
