Healthy Recipe of the Week – Winter Quinoa

A common phrase I hear a lot and have found to be true with myself, is you crave produce that is in season. While winter time does have its downfalls to the variety of produce in the season, where it flourishes is in citrus. I could and am perfectly happy with having some version of orange every single day as my snack, however this method would not live up to the full potential of the fruit. This is a fun recipe that lets me use citrus in a different way, while also giving me a good serving of plant-based protein from the wonderful whole grain that quinoa is.

Healthy Recipe of the Week – Spicy Coco Sauce

This Spicy Coco Sauce recipe is amazing and goes great with grains, cauliflower rice, roasted vegetables, and more! It keeps for about a week so feel free to experiment with it in different meals. The first time I tried it was at my sister-in-law’s house, where she mixed it in with some roasted vegetables she cooked that night. With the holidays over and the new year starting, it’s a great time to start fresh with routines and begin healthy habits. While I don’t go out of my way to set resolutions for myself in the new year, I have recently made a personal goal to get better at meal prep.
